Place ground meaet/subsitute in a steal bowl. Use hands to knead in 1-2 TBSP of spice/LB. Pick up meat and throw it down with force about 25 times, kneeding between throws. Alternatively, use a standing mixer with a paddle and on medium low speed mix for 5 minutes.Rest for one hour in the fridge. Shape into a loaf and roast in 350 0F for 1.5 hours or internal temp of 160 0F turning over at halfway point.
